Terri's Awesome Potato Salad
 
 
Sometimes, when we're lucky, we get to be guests at Walt & Terri's cottage on the lake. If we're really lucky, Terri makes this salad for us too. It's a totally different take on the potato salad we grew up with! Good stuff, thanks, Terri!
 
5 lbs    red potatoes, washed and cut into bite-sized cubes (skin on)  
2 Tbs    Olive oil  
2 Tbs    Bacon crumbles (fried at home or from a jar)  
1 Tbs    Prepared horseradish  
1 C    Mayonnaise (low fat works well, but not Miracle Whip)  
1/4 C    Bleu cheese crumbles  
  Garlic salt  
  Pepper  
 
Toss potatoes with olive oil. Sprinkle generously with garlic salt and pepper. Roast in a single layer on a cookie sheet at 450°F for 20 minutes or until done. Let potatoes cool for about 15 minutes. Mix mayo to 1 T horseradish (start with this amount and make more if needed, also add more horseradish if you like the zing!). Put potatoes in a large bowl and toss with dressing, bacon crumbles and bleu cheese. Serve warm.
