Grandma's Hot Milk Cake
 
 
I remember Grandma making and serving this with fresh strawberries from the garden! I've not made it in years, but I remember it well.
 
2   eggs  
1 cup    sugar  
1 cup    flour  
1/8 tsp    salt  
1 tsp    baking powder  
1/2 cup    hot milk  
1 Tbs    shortening  
 
Beat eggs until light and fluffy. Slowly add sugar and beat until very light and thick. Combine flour and baking powder and salt. Fold into the egg and sugar mixture all at once. Melt the shortening in the hot milk and add all at once. Addition of flour and milk should take only about 60 seconds. Pour into greased and floured pan. Bake in preheated oven at 350°F for 30 minutes.
