| In small sauce pan, heat olive oil over medium heat.
Mince onions and garlic fine. Sweat in olive oil over low heat until soft.
Add remaining ingredients and bring to simmer. Cook covered over low heat for 30 minutes.
Store, and chill overnight. |

| Like a lot of complicated things, this sauce matures well and is better if it sits overnight.
Use additional lemon juice/born sugar/hot sauce to balance the final product. It should be bright, sweet, and spicy.
