Citrus Barbecue Sauce
 
 
1 small    onion  
1 clove    garlic  
1 Tbs    Medium-hot chile powder  
1 Tbs    Smoked Spanish paprika, or 1/2T Hungarian half-sharp paprika  
1 leaf    bay leaves  
1 tsp    Coleman's mustard powder  
.5 tsp    ginger, powdered  
.5 tsp    curry powder  
.5 tsp    black pepper, ground fine  
.5 tsp    red pepper flakes  
1 cup    catsup  
.5 cup    mojo criollo - Goya  
2 Tbs    lemon juice - fresh  
2 Tbs    molasses  
1 Tbs    Worcestershire sauce  
1 Tbs    Soy Sauce  
1 tsp    Balsamic vinegar  
2 Tbs    Brown sugar  
1 tsp    Lemon peel  
1 Tbs    olive oil  
1 tsp    hot sauce - Marie Sharp's if possible  
 
In small sauce pan, heat olive oil over medium heat. Mince onions and garlic fine. Sweat in olive oil over low heat until soft. Add remaining ingredients and bring to simmer. Cook covered over low heat for 30 minutes. Store, and chill overnight.

 Cooking Tips
Like a lot of complicated things, this sauce matures well and is better if it sits overnight. Use additional lemon juice/born sugar/hot sauce to balance the final product. It should be bright, sweet, and spicy. This stores and serves well in pint jars.
