Chocolate Gelato
 
 
2   eggs, slightly beaten  
3/4 cup    unsweetened Dutch cocoa powder  
1 tsp    Ceylon Cinnamon  
1 tsp    Mexican vanilla  
3/4 cup    sugar  
1 cup    milk  
1 1/2 cups    whipping cream  
 
Mix together all of the dry ingredients, whisk in the eggs and cream. Chill thoroughly in the refrigerator and then process in an ice cream maker according to the directions for your particular machine. Makes about 1Qt.
