| This recipe is from Terry Straub, a colleague of Gelina's in the volunteer world. Great guy - incredible dessert . A cross between a pudding and chocolate fudge, this incredibly decadent desert is often served with cappuccino or vanilla ice cream. Makes 16 servings. |

Butter 2 cups (4 sticks) unsalted butter, cut into 1/2-inch pieces |

plus 2 tablespoons hot espresso coffee |

bittersweet (not unsweetened) or semisweet chocolate, chopped |

extra-bittersweet (not unsweetened), chopped (use bittersweet if you can't find the extra-bittersweet) |

Position rack in center of oven and preheat to 325°F. Generously butter 8-inch-diameter spring form pan with 2 3/4-inch-high sides. Line bottom with parchment or waxed paper. Butter and flour paper. Melt 2 cups butter with sugar and espresso in heavy 3-quart saucepan over medium-low heat, stirring until sugar dissolves. Add both chocolates and stir until smooth. Remove chocolate mixture from heat. |

Whisk eggs and yolks in large bowl until frothy. Whisk into chocolate mixture. Pour batter into prepared pan. Place pan on heavy baking sheet. Bake until edges puff and crack slightly but center is not completely set, about i hour; do not over bake (cake will set as it cools). Transfer to rack and cool. Cover and refrigerate overnight.Run small sharp knife around cake pan sides to loosen. Carefully release pan sides. Sift powdered sugar over cake. Cut into wedges, wiping knife clean before each cut. Serve with ice cream or whipped cream if desired |
